This recipe is so simple it almost doesn't need a fully dedicated post but I though I'd just write it out just in case anyone was particularly interested in the photo that I posted on Instagram. These are different than my oil free potatoes in that I like to use a little bit of olive oil and I cook them on the stovetop.
- 4 medium yukon gold potatoes
- 1/4 yellow onion
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp thyme
- salt, to taste
- Peel and cube the potatoes, dice onion and add them to a pan with 1-2 tbs olive oil.
- Sauté over medium heat until potatoes are well coated in oil, about 3-5 minutes. Add spices, then cover and reduce heat to medium low. Continue cooking for another 15-20 minutes, stirring occasionally. Once the potatoes are soft, remove the top and continue sautéing until they are crispy on all sides.
