Vegan Mango Lassi Popsicles
The other day I was laying around minding my own business when suddenly the idea hit me to make a mango lassi popsicle. After patting myself on the back for coming up with such an original idea and wondering why no one had ever done it, I took to google and found out that it has in fact been done. Sigh. But these days, are any ideas original? Idk. Anyway, here is my take on the Mango lassi popsicle!
I really wanted to add some passionfruit to this these pops to give it a little more pizzaz but I ended up eating all of mine while waiting for the popsicle sticks to arrive in the mail. So if you don't mind the recipe being a little less than traditional, add some passionfruit! Lime is also a good alternative if you don't have access to such exotic fruits. Plus, if all goes according to plan, after filling the 8 popsicle molds, you should have enough of the mixture left to enjoy a refreshing mango lassi as you impatiently wait for them to freeze overnight!
Prep: 10 minutes. Freeze time: 4-12 hours. Makes 8 popsicles
- 2 cups ripe mango
- 2 cups dairy free yogurt (I used Lavva)
- 1 cup almond milk
- 1/2 tsp cardamom
- 1 tsp organic sugar (or to taste) *skip this if your yogurt is sweetened!*
- Juice of 1 lime, or passionfruit if you have access (optional)
- Peel and dice mango and add it along with the yogurt, almond milk and cardamom to a blender. Blend until fully incorporated and smooth, then add sugar to taste.
Pour into popsicle molds and freeze for at least 4 hours but preferably overnight.
